You see, carrots are the perfect base for any side dish. Yes they’re a healthy, vitamin-packed, immune-boosting superfood… blah blah blah… but their warm sweet flavor makes the perfect accompaniment to almost any cooked dinner.
And today we’re mixing it with honey.
Honey is an often underrated ingredient when cooking savory food. We all know it as a great topping for porridge, but it can be used to enhance baked dishes like honey bread, rack of lamb, and even meatballs (yes, meatballs!).
However where I see them used best is to make a glaze. And nowhere is this done best than with these honey glazed carrots.
The honey brings a beautiful sweetness to the plate, and the roasting process caramelizes the natural sugars perfectly. All of this mixed with carrots makes this recipe a great side dish to almost any roasted dinner meal. And what’s more: It’s brilliantly easy to make.
- 5-6 large carrots washed, peeled and halved lengthwise
- 2 tbsp honey
- 1 tbsp olive oil
- ½ tsp sea salt
- ½ tsp black pepper
- Parsley chopped
Start by preheating your oven to 400°F/200°C.
In a medium-sized bowl, mix the honey, olive oil, salt and pepper.
Once combined, add in the carrots. Combine so carrots are coated in honey-olive oil mix.
Line a baking tray with kitchen foil. Spread the carrot pieces out evenly across the foil.
Put the tray in the oven and cook the carrots for 30 minutes.
Remove the oven, sprinkle on chopped parsley as garnish. Serve and enjoy.
