Lemon Bars (Recipe)

This recipe combines creamy, zesty lemon filling with a rich and buttery shortbread crust that just comes together to create a winning dessert or sweet snack.

While this isn’t a recipe that I would have thought to make, I’m glad to say that it really is as easy as it is divine. The combination of the ingredients ensures that it’s not too tart and not too sweet.

It all makes for a tender and buttery bar, with a beautiful sweet and tangy finish to it. And no, you won’t be able to have just one.

And for anyone out there who isn’t convinced by lemon bars… Give these a go and you’ll be a true believer.

If you like your lemon-flavored snacks a little more lemony then you can easily modify this recipe by increasing the amount of zest. I’d try not to use any more than the zest of one lemon though, just so the flavor doesn’t completely overpower the whole thing.

Also, if you’re nervous about the amount of butter in this recipe, I recommend giving coconut oil a go instead.

  • Ingredients
  • 1/2 cup butter at room temperature
  • 1/4 cup powdered sugar
  • 1 cup all purpose flour
  • dash salt
Lemon Filling:
  • Zest of one large lemon
  • 1 cup sugar
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons all purpose flour
  • 1/2 teaspoon baking powder
  • 2 large eggs
  1. Start by preheat oven to 350°F/180°C and greasing a baking dish.
  2. We’ll start with the dough for the crust. In a large mixing bowl, mix together the butter and powdered sugar. Follow that by mixing in the flour and salt until the dough is combined.
  3. Press your new dough into the bottom of the baking dish. Ensure it’s covered the base and inside of the dish, and is spread evenly.
  4. Bake the dough for 10 minutes.
  5. Remove the dish from the oven (but leave the oven on!) and set to one side.
  6. Now onto the filling. In a new mixing bowl, stir the sugar and lemon zest until combined. Then add in the flour, baking powder, eggs and lemon juice. Combine thoroughly until the sugar has dissolved.
  7. Pour the mixture over the baked crust and place baking dish back in the oven. Bake at same temperature until the lemon filling has set, usually about 20 minutes.
  8. Remove the baking dish from the oven. Sprinkle powdered sugar over the dish and leave to one side to cool and set.
  9. Once set, cut into squares and serve.
