Is there anything more satisfying to eat than a wrap? Maybe it’s just me, but taking a huge bite out of a wrap packed full of tantalizing ingredients is one of the greatest joys in life… OK, maybe that is just me.
Anyway, this recipe today is a really simple one, but a great one for when you’re in a rush, and it can even be pre-prepared to have later.
Now you might be put off by the inclusion of quorn here but, bear with me, it’s a worthy inclusion.
Quorn and I have a love-hate relationship. For every instance where I stumble upon a quorn product that surprises me (quorn cocktail sausages, anyone?), I’ll find a similar product that really underwhelms me (sorry, quorn burgers).
Luckily however, quorn chicken style pieces do the trick perfectly. I’m not actually vegetarian by any means, but I have a real dislike of pan-fried chicken pieces, particularly when compared to cooked chicken in the oven. So, I actually often turn to the quorn variety instead. It doesn’t take as long to cook and retains its shape and flavor brilliantly.
This recipe is as easy as it looks to cook and makes a great lunch, or even dinner if you’re feeling lazy.
I tend to like my food with a bit of a kick, but the amounts I’ve given here for the chilli powder and red peppers are fine for a much milder palette – so fear not, spice-averse friends.

- 150 g Quorn chicken-style pieces or similar vegetarian product
- Juice of ½ lime
- ½ tsp chilli powder
- 1 garlic clove minced
- 1 tsp olive oil
- 2 wholemeal or seeded wraps
- 1 avocado halved, stoned and then mashed
- 1 capsicum from a jar
- few sprigs coriander chopped
Warm the wraps up either in the microwave or the oven at a medium heat, don’t let them dry or crisp because they’ll be hard to roll.
Heat up a frying pan with a teaspoon of oil on a medium heat.
While that’s heating up, mix the Quorn (or the vegetarian product you’ve chosen) with the chilli powder, garlic and lime juice in a bowl. Add the mix to the pan for a couple of minutes, and then add the capsicum for no longer than a minute, just to warm it up.
Remove the wraps from the heat. Apply the mashed avocado between each wrap, and then add the quorn mix from the frying pan. Sprinkle on the coriander. Roll up and serve!
