Double Smoked Spiral Ham

This BBQ spin on the holiday classic will prove an instant hit at the dinner table. Smoked over cherry wood and finished with a sweet and spicy glaze, there’s nothing quite like this double-smoked spiral ham.

Equipment

  • cherry smoking wood chips
  • Shallow aluminum pan
  • Chicken tray

Ingredients

  • 8 lb ham spiral cut
  • 1 cup apple jelly
  • 1 cup raspberry chipotle BBQ sauce

Instructions

  • Heat up smoker to 275°F. Add cherry wood to smoker.
  • Remove ham from all packaging and transfer to chicken tray, cut-side-down. Place on cooking tray and transfer to smoker. Close lid and cook for 2 hours.
  • Heat up saucepan over medium heat. Add apple jelly and stir well, until it reaches a liquid consistency.
  • Add raspberry chipotle. Stir in and bring glaze to a simmer. Leave saucepan on warm heat until ham is ready.
  • Transfer ham to shallow aluminum pan. Apply glaze to ham using basting brush. Make sure to cover all cracks on ham surface.
  • Still in shally pan, put ham back in smoker. Close lid and leave to smoke for 30 more minutes.
  • Remove ham from smoker and transfer to cutting board. Leave to rest for 10 minutes.
  • Cut along the outer seam of the ham, allowing the slices to fall away.
