Ingredients

  • 3 lbs tri-tip

Dry Rub

  • 2 tbsp kosher salt
  • 2 tbsp ground black pepper
  • 2 tbsp smoked paprika
  • 2 tbsp garlic powder

Instructions

  • Fire up your pellet grill to 225°F (107°C) with lid shut and hopper stocked with wood pellets
  • In a small bowl, combine the rub ingredients. Use a fork to remove or crush any lumps that form.
  • Apply rub to tri-tip, covering all sides and working into any crevices or foils in the meat
  • Once your pellet grill has preheated, place tri-tip on grill grates. Smoke to an internal temperature of 125°F (52°C) for medium-rare, about 90 minutes.
  • Increase pellet grill temperature to high, at least 450°F (230°C). Sear tri-tip for 2-4 minutes on each side.
  • Remove tri-tip from the grill and allow it to rest for 10 minutes
  • Slice against the grain to serve
