Smoked New York Strip Steak

Deliciously tender New York strip steak smoked low and slow on your backyard grill or smoker. This easy BBQ steak recipe takes less than an hour before it’s seared over high heat for the perfect finish.

Ingredients

  • 2 16 oz New York strip steaks
  • 2 tsp kosher salt
  • 2 tsp ground black pepper
  • 2 tbsp butter
  • 1 clove garlic crushed
  • 1 sprig fresh rosemary

Instructions

  • Preheat your smoker to 180°F (82°C). Add wood chips to the coals or wood tray
  • Season the steaks liberally with salt and pepper and place them on smoker grates
  • Smoke the strip steaks until the internal temperature reaches 120°F (49°C), about 50 minutes. Pull the steaks from the smoker.
  • Set a cast iron skillet to high heat. Once hot add 1 tbsp of butter, crushed garlic, and rosemary. Give it a quick swirl and add your steaks to the pan. Sear quickly on both sides (enough to get some color) and baste with the melted butter.
  • Remove the steaks from the pan when the internal temperature reaches 130°F (54°C), or to your preferred cook, dot each with ½ tbsp of butter and cover with foil. Rest for 10 minutes before serving.
