150gQuorn chicken-style piecesor similar vegetarian product
Juice of ½ lime
½tspchilli powder
1garlic cloveminced
1tspolive oil
2wholemeal or seeded wraps
1avocadohalved, stoned and then mashed
1capsicumfrom a jar
few sprigs corianderchopped
Instructions
Warm the wraps up either in the microwave or the oven at a medium heat, don’t let them dry or crisp because they’ll be hard to roll.
Heat up a frying pan with a teaspoon of oil on a medium heat.
While that’s heating up, mix the Quorn (or the vegetarian product you’ve chosen) with the chilli powder, garlic and lime juice in a bowl. Add the mix to the pan for a couple of minutes, and then add the capsicum for no longer than a minute, just to warm it up.
Remove the wraps from the heat. Apply the mashed avocado between each wrap, and then add the quorn mix from the frying pan. Sprinkle on the coriander. Roll up and serve!
