Spicy Quorn Avocado Wraps

Ingredients

  • 150 g Quorn chicken-style pieces or similar vegetarian product
  • Juice of ½ lime
  • ½ tsp chilli powder
  • 1 garlic clove minced
  • 1 tsp olive oil
  • 2 wholemeal or seeded wraps
  • 1 avocado halved, stoned and then mashed
  • 1 capsicum from a jar
  • few sprigs coriander chopped

Instructions

  • Warm the wraps up either in the microwave or the oven at a medium heat, don’t let them dry or crisp because they’ll be hard to roll.
  • Heat up a frying pan with a teaspoon of oil on a medium heat.
  • While that’s heating up, mix the Quorn (or the vegetarian product you’ve chosen) with the chilli powder, garlic and lime juice in a bowl. Add the mix to the pan for a couple of minutes, and then add the capsicum for no longer than a minute, just to warm it up.
  • Remove the wraps from the heat. Apply the mashed avocado between each wrap, and then add the quorn mix from the frying pan. Sprinkle on the coriander. Roll up and serve!
