Start by preheating your oven to 400°F/200°C.
In a medium-sized bowl, mix the honey, olive oil, salt and pepper.
Once combined, add in the carrots. Combine so carrots are coated in honey-olive oil mix.
Line a baking tray with kitchen foil. Spread the carrot pieces out evenly across the foil.
Put the tray in the oven and cook the carrots for 30 minutes.
Remove the oven, sprinkle on chopped parsley as garnish. Serve and enjoy.
