Barbecue Smoked Turkey

Beautiful slow smoked turkey. Smoked over apple wood and served with a garlic and paprika BBQ rub for delicious results.

Equipment

  • Smoking wood (apple, cherry or maple)
  • Smoker thermometer

Ingredients

  • 12 lb turkey

Turkey BBQ Rub

  • 2 tbsp kosher salt
  • 2 tbsp dark brown sugar
  • 1 ½ tbsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp ground sage
  • ½ tsp garlic powder
  • ½ tsp freshly ground black pepper

Instructions

  • Prepare turkey by removing neck and giblets. Trim off any loose pieces. Rinse with cold water. Pin down wings using a toothpick.
  • Combine rub ingredients in a small bowl. Apply rub generously to turkey, ensuring you also work the rub in under the skin of the bird. Also apply to the cavity.
  • Preheat smoker to 250°F (120°C). When warmed up, add smoking wood to the firebox and place a water pan on the cooking grates.
  • Place turkey on grates. Smoke for 4-6 hours, or until internal temperature has reached 180°F/(82°C).
  • Remove turkey from smoker and place on cooling grate or chopping board. Cover in aluminum foil and leave to rest for 15 minutes. Carve to serve.
