Grilled Pizza [Easy Dough & Topping Ideas]

Equipment

  • Pizza stone
  • Thermometer
  • Pizza peel or no-rim cookie tray
  • Mixing bowl
  • Spatula and pancake flipper (optional)

Ingredients

Pizza Dough

  • 1 tsp yeast
  • ½ cup warm water
  • 1 tbsp olive oil
  • 1 ½ cups all-purpose flour
  • ½ tsp kosher salt
  • cornmeal

Toppings

  • cup pizza sauce
  • ½ cup shredded mozzarella
  • cup shredded cheddar
  • ½ green bell pepper
  • ¼ red onion
  • 10 slices pepperoni ham, or salami

Instructions

  • Mix the yeast and warm water. Sift together salt and flour. Mix the yeast and water with the flour mixture. Add olive oil. Begin by mixing with a spatula until a rough dough forms. Flour a work surface and knead until you create a uniform dough, about three minutes. Set aside in a covered bowl to rise for two hours.
  • On your pizza peel or cookie tray, put a layer of flour and cornmeal down. The cornmeal will give your dough extra crispiness. Toss your dough until it forms a round shape. Put the dough on the cornmeal.
  • Using the backside of a ladle or spoon, lather the dough in your pizza sauce. Next, add the meat of your choosing, then add half of the red onions. Then you need to put the shredded cheese on the pizza. After adding the cheese, put the remaining red onions and the bell pepper on top. Finally, brush a layer of olive oil on the whole pizza.
  • Slide the pizza off the peel or cookie tray onto the center of the pizza stone. Check every three minutes, rotating the pizza 90º every time.
  • Check if the pizza has browned to your liking by lifting one edge and looking. If it’s finished, use your pizza peel to lift it out of the BBQ. If you don’t have a pizza peel, you can use two pancake flippers to lift it onto the cookie tray.
