- 4 medium russet potatoes
- 2 tbsp olive oil
- 2 tbsp BBQ rub
Toppings
- 4 tbsp unsalted butter
- 1 cup sour cream
- 1 cup cheddar cheese shredded
- 4 tbsp chives diced
- crumbled bacon optional
- shredded brisket optional
Fire up your smoker to 250°F (121°C). If you are using a charcoal grill, ensure you set up for 2-zone indirect grilling.
Prepare your potatoes by washing and scrubbing them well to remove dirt. Pierce each potato with a fork several times, all over.
Apply a thin layer of olive oil over the potatoes. Then, apply a generous amount of BBQ rub to each potato.
Place potatoes on smoker grates. Close lid and smoke for 3-4 hours, or until internal temperature is 200-210°F (93-99°C). At this point, you should be able to insert a fork into the potato with little resistance.
Remove potatoes from the smoker and serve immediately with your choice of toppings.
