Ingredients

  • 1 lb red potatoes thinly sliced
  • 1 small onion thinly sliced
  • ½ cup milk
  • 3 tbsp butter cubed
  • 1 tsp kosher salt or more to taste
  • 1 tsp black pepper
  • 2 tsp smoked paprika

Garnish (Optional)

  • ¼ cup chives chopped

Instructions

  • Preheat the grill to medium heat, about 350°F (180°C), and grease a cast iron skillet with butter or cooking oil
  • In a large bowl, toss the sliced potatoes in salt, pepper, and paprika
  • Layer the sliced onions on the bottom of the skillet, followed by the seasoned potato slices. Spread the potatoes evenly across the skillet surface.
  • Pour the milk over the top of the potatoes and onion, then evenly sprinkle the butter cubes over the top of the potatoes
  • Cover the skillet with foil and place the skillet on the grill. Cook for 45 minutes.
  • Remove the foil cover and continue cooking the potato skillet until the potatoes are fork-tender, about 10 minutes
  • Remove skillet from grill. Garnish with chives and serve warm.

Notes

  1. Yukon gold potatoes will also work in place of red potatoes. Russet potatoes will also work, however they will change texture due to their comparatively high starch content.
