Pellet Grill Smoked Chicken Wings

- 3 lbs chicken wings
- 1 tbsp baking powder
Dry Rub
- 2 tbsp smoked paprika
- 2 tbsp chili powder
- 1 tbsp dried thyme
- 2 tbsp garlic powder
- 2 tbsp cumin powder
- 1 tbsp kosher salt
- 2 tbsp ground black pepper
Fire up your pellet grill to 250°F (120°C)
While pellet grill warms up, make the dry rub. In a small bowl, combine the dry rub ingredients. Use a fork to crush or remove any lumps that appear.
Pat the wings dry with paper towels to remove excess moisture. Then, lightly coat with baking powder.
Apply dry rub to each wing, covering all sides and working into any folds or crevices on the meat surface
Once your pellet grill is at cooking temperature, arrange the wings on the grill grates. Close the lid and smoke wings to an internal temperature of 155°F (68°C), about 45 minutes.
Increase your grill’s temperature to 450°F (230°C) and continue to cook your wings until the internal temperature reaches 165-170°F (74-76°C)
Remove from pellet grill and serve right away
