Poached Eggs & Avocado Toast

Ingredients

  • 2 ripe avocados
  • 1 fresh dill, finely chopped
  • 8 cherry tomatoes, halved
  • 2 cups spinach, roughly chopped
  • juice of half a lime
  • 100 grams feta, hand crumbled
  • 4 eggs
  • 4 slices wholemeal bread, toasted

Instructions

  • Halve and deseed the avocados. Remove the skin and empty the flesh into a bowl. Mash until smooth.
  • Stir in the lime juice and then add the chilli, cherry tomatoes, and chopped spinach. Combine well then set aside.
  • Start preparing the toast, and then poach your eggs.
  • Once the toast is ready, spread the avocado mash mixture on top. Crumble feta on top.
  • When the poached eggs are ready, remove from water and place each egg on top of the toast. Season to taste with salt pepper.
