Poached Eggs & Avocado Toast

Ingredients

ripe avocados
1
fresh dill, finely chopped

cherry tomatoes, halved
2
cups
spinach, roughly chopped
juice of half a lime

feta, hand crumbled

eggs

slices
wholemeal bread, toasted
Instructions
Halve and deseed the avocados. Remove the skin and empty the flesh into a bowl. Mash until smooth.
Stir in the lime juice and then add the chilli, cherry tomatoes, and chopped spinach. Combine well then set aside.
Start preparing the toast, and then poach your eggs.
Once the toast is ready, spread the avocado mash mixture on top. Crumble feta on top.
When the poached eggs are ready, remove from water and place each egg on top of the toast. Season to taste with salt pepper.
