Brisket Grilled Cheese
If you have a few slices of extra brisket lying around, try this BBQ brisket grilled cheese recipe to turn them into a gooey and delicious leftover sandwich.

- 1 tbsp olive oil
- 1 cup brisket shredded or thinly sliced
- 4 slices bread Texas Toast or sourdough, each cut about ½ inch thick
- 2 tbsp butter
- 1 cup cheddar cheese shredded
- 1 cup gruyere cheese shredded
Heat oil in a cast iron skillet over medium heat
Add shredded brisket to the skillet and heat for 3-4 minutes until warm
Remove brisket from skillet and wrap in aluminum foil
Spread butter on one side of each slice of bread. Layer cheese on the dry side of one slice of bread, then add brisket and top with more cheese.
Place the other slice of bread on top, buttered side facing up. Repeat the process for any other sandwiches.
Cook each sandwich on the skillet for about 3 to 5 minutes per side
When both sides are golden brown, remove from skillet, slice, and serve hot
