Equipment

Ingredients

  • 4 bone-in pork chops

Marinade

  • 2 tbsp brown sugar
  • 2 tbsp olive oil
  • ¼ cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 3 cloves garlic minced
  • 1 tsp apple cider vinegar
  • 1 ½ tsp liquid smoke
  • ¼ cup honey

Instructions

  • Add all the ingredients to a bowl. Whisk until combined.
  • Place the pork chops in a ziplock bag. Pour the marinade over the pork chops, and then seal the bag (if you don’t have a ziplock bag, you can use a bowl covered in plastic wrap)
  • Shake the bag to ensure that the pork chops are thoroughly coated
  • Place the covered pork chops in the refrigerator and leave to marinate for at least 2 hours, or overnight
  • When ready to cook, fire up your grill to 400°F (205°C)
  • Remove pork chops from the refrigerator and discard excess marinade. Leave the pork chops to sit at room temperature while your grill warms up.
  • Cook for 5-8 minutes per side, until the meat hits an internal temperature of 145°F (62°C) for medium-rare or 160°F (70°C) for medium and no pink in the middle. Use a digital meat thermometer for an accurate reading.
  • Remove from heat and rest for 10 minutes before serving
