Fire up your smoker to 250°F (120°C)
In a small bowl, combine the seasoning ingredients: kosher salt, chili powder, smoked paprika, and garlic powder
Melt the butter in a cast iron skillet over medium heat
Remove skillet from heat and add peanuts, stirring to coat the peanuts in butter. Add the seasoning, combining evenly.
Transfer the peanut skillet to your smoker. Add hickory wood to your coals or wood tray, and close door/lid. Smoke for 45 minutes, stirring the peanuts every 15 minutes.
Remove from smoker and allow peanuts to cool completely before serving. Alternatively, allow to cool then store in an airtight container.
